  • RED CURRY PASTE: Red curry paste provides concentrated flavor with aromatics like lemongrass, chilies, garlic, and spices. It gives the sauce complexity while allowing the yellow curry powder to remain the dominant flavor.
  • YELLOW CURRY POWDER: Yellow curry powder is the heart of this dish. Its blend of turmeric, cumin, fenugreek, and warming spices gives the sauce its beautiful golden color and classic curry flavor.
  • CORIANDER: Coriander adds a subtle citrusy, floral note that brightens the curry and pairs beautifully with coconut milk and fresh cilantro.
  • GINGER PASTE: Ginger adds warmth and freshness without overwhelming the dish. The prepared paste is a convenient shortcut that delivers excellent flavor.
  • COCONUT MILK: Use full-fat coconut milk for the creamiest sauce. It creates a silky texture and mellow sweetness that makes this curry incredibly comforting.
  • LIME: Fresh lime juice is the finishing touch that brings the entire dish to life. A squeeze just before serving brightens the rich coconut curry sauce, enhances the warm spices, and adds a fresh burst of citrus that balances every bite. Don’t skip it—it makes all the difference.
  • FRESH CILANTRO: Cilantro brightens the finished dish and balances the richness of the coconut milk. If you’re serving over rice, sprinkle a little over the top just before serving.

STEP-BY-STEP INSTRUCTIONS

Step 1: Preheat the oven to 450 degrees F. Line a baking sheet with parchment. Add the chicken, green onions, garlic, Worcestershire sauce, and a pinch each of salt and pepper to a bowl. Mix until just combined. Coat your hands with a bit of oil, and roll the meat into tablespoon-size balls (will make 15-20 meatballs) placing them on the prepared baking sheet. The mix will be wet, but it will firm up in the oven. Transfer to the oven and bake for 15 minutes or until the meatballs are crisp and cooked through.

Bakers Tip: Double the meatball recipe, bake them all, then freeze half of the meatballs for another time. You can then easily turn this dinner into a 15 minutes situation since all you’ll need to do is thaw the meatballs and toss them with the sauce. EASY. Additionally, you can use the meatballs for other recipes too!

Step 2: While the meatballs cook, heat 2 tablespoons Olive oil in a large skillet over medium-high heat. Add the shallots and bell pepper and sauté for 3–5 minutes or until onions begin to turn golden.

Step 3 : Add the garlic and ginger; stir to coat everything with the oil. Lower the heat to low and add in the curry powder, red curry paste, and coriander. Stir often for 2–3 minutes or until lightly toasted and fragrant.

Step 4 : Pour in coconut milk, and 1 tablespoon lime juice and stir to combine.

Step 5: Add the meatballs to the sauce and cook for about 3-4 minutes until heated through.

SERVING SUGGESTION:

Serve these Coconut Curry Chicken Meatballs over a bed of fluffy jasmine rice with plenty of the creamy curry sauce spooned over the top. Garnish with fresh cilantro for a burst of color and freshness, and don’t forget the warm naan—it’s perfect for soaking up every last bit of that incredible sauce. If you’d like to round out the meal, pair it with a simple cucumber salad or steamed broccoli for a fresh, crisp contrast to the rich curry.

  • 1 Red or Orange bell pepper

  • 2 teaspoons Yellow Curry Powder
  • 2 teaspoons Ground Coriander
  • 1 (13.5 oz) Can Full-fat Coconut Milk
  • 1 Lime
  • Salt & Pepper to taste
  • Fresh Cilantro for garnish

Directions
