Mediterranean Market Roasted Potatoes

There are few side dishes more comforting than perfectly roasted potatoes. Crispy and golden on the outside, light and fluffy on the inside, they’re the kind of recipe that complements just about everything.

These roasted russet potatoes are seasoned simply with olive oil and my Mediterranean Market seasoning blend, allowing the herbs, garlic, citrus, and warm spices to create incredible flavor without a long list of ingredients. As they roast, the edges become beautifully caramelized while the centers stay soft and tender, making them impossible to resist straight from the pan.

Whether you’re serving them alongside grilled meats, roasted chicken, seafood, or your favorite weeknight dinner, these potatoes are a dependable side dish you’ll find yourself making again and again. They’re simple, full of flavor, and proof that a few quality ingredients can create something truly memorable.


WHAT YOU’LL NEED

  • RUSSET POTATOES: Russet potatoes are my favorite choice for this recipe because of their high starch content. As they roast, the outsides become beautifully crisp while the centers stay light and fluffy. Cutting the potatoes into evenly sized pieces ensures they cook at the same rate and develop those irresistible golden edges.
  • MEDITERRANEAN MARKET SEASONING: This vibrant blend combines garlic, herbs, citrus, and warm spices inspired by the flavors of the Mediterranean. It transforms simple roasted potatoes into a side dish that’s bright, savory, and incredibly versatile. From roasted vegetables to grilled meats and seafood, it’s one of those seasonings you’ll find yourself reaching for again and again.
  • EXTRA VIRGIN OLIVE OIL: A generous drizzle of olive oil helps the seasoning coat every piece of potato while encouraging beautifully caramelized, crispy edges. I used Graza Sizzle, but any good-quality extra virgin olive oil will work beautifully.
  • FRESH PARSLEY: A sprinkle of chopped parsley at the end adds freshness, vibrant color, and a clean finish that balances the rich roasted potatoes.

STEP-BY-STEP INSTRUCTIONS

Step 1 – Preheat your oven to 425°F.

Wash and scrub the russet potatoes well, then cut them into 1-inch cubes. Keeping the pieces a similar size helps them roast evenly and ensures every bite is perfectly tender. Spread the potatoes onto a large sheet pan and drizzle with the olive oil.

Baker’s Tip: Resist the temptation to overcrowd the pan. If the potatoes are piled on top of one another, they’ll steam rather than roast. A little breathing room is the secret to achieving that perfectly crisp exterior while keeping the centers light and fluffy.

Step 2 – Sprinkle evenly with the Mediterranean Market seasoning. Using a spatula, toss until every piece is well coated. Transfer the sheet pan to the preheated oven and roast for 25–35 minutes, turning the potatoes halfway through cooking. This helps every side develop a beautifully crisp, golden crust.

The potatoes are done when they’re deeply golden on the outside and easily pierced with a fork. If you prefer extra crispy potatoes, leave them in the oven for an additional 5–10 minutes, keeping a close eye on them toward the end.

Serve immediately while they’re hot and crispy.

Baker’s Tip: Don’t rush the roasting process. The deep golden color is where the magic happens—it means the natural sugars have caramelized, creating incredible flavor and those irresistible crispy edges.

Ingredients

  • 3 large Russet potatoes, diced
  • 2 Tablespoons Extra Virgin Olive Oil
  • 2 Tablespoons Mediterranean Market Seasoning Blend
  • 1 Tablespoon Fresh Parsley, chopped
  • SEASONING: if you don’t have Mediterranean Market blend

  • 1 teaspoon kosher salt
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon dried oregano
  • ½ teaspoon dried basil
  • ¼ teaspoon thyme
  • ¼ teaspoon paprika
  • ¼ teaspoon cracked black pepper
  • ¼ teaspoon ground coriander
  • ¼ teaspoon sumac (if you have it)
  • Pinch red pepper flakes (optional)

Directions

  1. Preheat your oven to 425°F.
