Step 6 : Slowly pour in the beef broth, stirring constantly to create a smooth, lump-free sauce. Season with the salt and black pepper, then bring the mixture to a gentle simmer. Cook for 5–7 minutes, stirring occasionally, until the sauce has thickened and become rich and glossy.
Baker’s Tip: Keep the sauce at a gentle simmer rather than a rapid boil. This allows it to thicken beautifully while keeping the beef tender and the mushrooms perfectly textured.

Step 7 : Remove the skillet from the heat. Stir in the butter until melted, then gently fold in the sour cream until the sauce is smooth, rich, and velvety. Taste and adjust with additional salt and pepper, if needed.

Ground Beef Stroganoff
Ingredients
- 1 lb Ground beef
- 14 oz Wide Egg Noodles
- 2 Tablespoon olive oil
- 1 onion, finely diced
- 2 cloves garlic, minced
- 8 oz white mushrooms, sliced
- 2 Tablespoons all purpose flour
- 2 Tablespoons tomato paste
- 1 Tablespoon sweet paprika
- 1 Tablespoon Worcestershire sauce
- 2 cups beef bone broth
- 2 Tablespoons butter
- 1/4 cup sour cream
- Salt & Pepper to taste
Directions
- Bring a large pot of salted water to the boil. Cook the pasta according to the packet instructions.
- Meanwhile, heat the olive oil in a large deep frying pan over medium–high heat. Add the onion and cook for 3–4 minutes until softened. Add the garlic and cook for 30 seconds until fragrant.
- Add the beef mince and cook, breaking it up with a spoon, until browned and cooked through.
- Add the mushrooms and cook for 4–5 minutes until softened and their moisture has mostly cooked off.
- Sprinkle the flour over and cook for 1 minute, stirring well. Add the tomato paste, paprika and Worcestershire sauce and cook for another 30 seconds.
- Pour in the beef stock, stirring constantly to avoid lumps. Add the salt and black pepper. Simmer for 5–7 minutes until thickened and glossy.
- Turn the heat off. Stir through the butter (if using) and sour cream until smooth. Add more salt to taste.
- Serve the pasta topped with the stroganoff. Sprinkle with parsley and extra cracked black pepper.
